San Brite Restaurant x Monocle

High in the Dolomites, a canny couple have turned an Alpine cabin into a restaurant that elevates the region’s cuisine.

The pair are doing daring things with long-ignores ingredients and improving the area’s fortunes.

Tucked away in the Dolomites, SanBrite champions local produce and a healthy life­style - but it's the owners who have put it on the culinary map.

Ludovica Rubbini runs the place with her husband, Riccardo Gasparo, who is also the chef; he's worked with the likes of Michelin-starred Massimo Bottura.

Wanting a simpler life, the couple opened SanBrite, a mountain-side restaurant with a farm shop. This was where they could make the best use of their own cheese - and rediscover local ingredi­ents such as lichen from the nearby forest.
